2012 Finale!

So.... here is my goal post from January 2012, along with an update of how I did for each of goal.

This year I have decided to challenge myself with goals in multiple different areas of my life... including in the kitchen!  I am planning on trying a new recipe, and baking something (FROM SCRATCH!) each month in 2012.  *My husband hasn't decided if he will try them all or not, but hopefully they are not complete failures and he enjoys eating them as much as I enjoy trying to make them. (I didn't do my best at baking and cooking, but I did try a few new recipes and made more food at home rather then eating out - A step in the right direction!)

I have also made goals in the financials areas of my life with plans to follow the Dave Ramsey plan and paying off all debt and begin working on our mortgage with "gazelle intensity".  We have also laid out an updated Budget and I plan to strictly stick to this, allowing us more money to put on our debt. (We did wonderfully at sticking to our budget, paying cash {or debit card} for almost everything, and paying off some debt, but we still have a ways to go, but we are still going strong!)

Health is another area that I have made goals in.  I plan to get into better shape, run a 5k (following the Couch to 5k plan), and eat healthier, including eating vegetarian meals for at least 1 week every 3 months.  I am also drinking more water, as well as green tea on a regular basis in order to help accomplish the goals I have created. (Ha, Ha, Ha, to pretty much all of this goal.  I ate more vegetarian meals, but I didn't make it with any length of time going vegetarian.  I started Couch to 5k - 3 times - but I never completed it, or ran in a 5k.  I did stick to drinking more water, tea, and green tea, which I feel has helped me to keep my health and weight in check.

Adding reading back to my life is another area of my goals.  I plan to read at least one book every month.  I have already finished my book for January, as well as listened to an audio book!  I just have to keep up with this pace and I will accomplish this goal with ease! (I did great at this goal!  I didn't stick to the exact 12 books that I set out to read, but I read over 30 books in total!  A great feeling of getting back into the swing of things in this area of my life)

My biggest goal of the year is to continue to plan and discipline myself to set goals, and work towards them on a steady basis.  Each week I am going to make a to-do list for myself so that I am able to stay on top of my planning and accomplish more then if I just woke up thinking "what should I do today".  As the saying goes...."1 minute of planning saves 10 minutes of execution". (Some months I did great at this, while some months I just stepped back and enjoyed the moments passing by.  I did create project lists, goals, and many other things that did get accomplished throughout the year, and I am moving into 2013 with a renewed passion to stay organized and goal driven!)

Some were better then others, some were flat out terrible, and a few of them helped me grow into a better person....  Either way I have a new set of goals for 2013 and new motivation to follow along with it!

Ready for Autumn?!

When school starts, that means it's time for the routines to set in, new schedules and activities to begin, and best of all....the weather to cool off and Fall Fun can Begin! I love jeans, sweatshirts, boots, bonfires, apple cider, pumpkin patches, even football.  Give me anything and everything fall!  However, this heat wave does not pair well with warm doughnuts and apple cider - it just makes for bees and overheating.  The pumpkin patches aren't as fun because you don't have on jeans and boots and crisp weather to make it more fun.  The barns stink from the heat when you are trying to feed the cows and enjoy the animals around the farm. This weekend we are going to make our Fall Bucket List and wish for a little chill in a the air so we can enjoy this beautiful season of life we are given.   We will continue to make new goals, improve on our good habits, and find new ways to love each other to the fullest.
This blog was originally started to document different things that we were doing in order to move towards early retirement.  That was years ago before we decided to have our Sweet B.  We planned to work, travel a little, and budget so we could retire and spend the rest of our lives doing whatever we wanted....  Life had other plans, and we now have the best gift of our lives - along with all of the expenses that come with having a child, as well as the want to not work as much so we could spend more time with her. Even with these new diversions, the goal remains - Retire Early, and Enjoy Life.  We have seen so many friends and family that are working into their later years, or who have too little money to actually enjoy their retirement, and even worse - those that never made it to their later years with the chance to retire and relax. Every year we give ourselves a large goal - one that is just enough of out reach to make us stretch for it, but realistic eno...

Diced Tomato Roast

Now that we are home from vacation, school has started, and extracurricular activities have taken over our life it is time to get back into the swing of grocery shopping and cooking at home. We got home Wednesday night, and since then Bailey and I have worked every day; B has had school, dance, and a soccer game; we have attended a birthday party and visited with family and friends that we missed while we were gone; Sunday School starts today; and there are only a few weekends left that will be nice enough for golf, so off to the course Bailey heads this morning. With all of this going on I have decided to make use of my crock-pot so that we have hot food, with minimal effort in the kitchen.   Saturday morning after the soccer game I ran to the grocery store to purchase a new vegetable that I am doing a review on (a post to come soon) and while I was there I looked at the markdowns to see if there were any good deals.  Luckily they had some great deals on meat.  ...
