Diced Tomato Roast

Now that we are home from vacation, school has started, and extracurricular activities have taken over our life it is time to get back into the swing of grocery shopping and cooking at home.

We got home Wednesday night, and since then Bailey and I have worked every day; B has had school, dance, and a soccer game; we have attended a birthday party and visited with family and friends that we missed while we were gone; Sunday School starts today; and there are only a few weekends left that will be nice enough for golf, so off to the course Bailey heads this morning.
With all of this going on I have decided to make use of my crock-pot so that we have hot food, with minimal effort in the kitchen.  
Saturday morning after the soccer game I ran to the grocery store to purchase a new vegetable that I am doing a review on (a post to come soon) and while I was there I looked at the markdowns to see if there were any good deals.  Luckily they had some great deals on meat.  I was able to get 2 packages of ground beef - 3 lbs each for just $4.49.  I also bought 2 boneless roasts for under $5.00 each.  
When I got home yesterday I pulled out my crock-pot - put some ground beef in, and topped it with kidney beans, diced tomatoes, jalapeno and banana peppers, and chili seasonings.  I then headed out the door knowing that when I got home last night the chili would be ready for us to enjoy.  When I got home last night I could smell it the minute I opened the door, and I love that feeling, knowing that dinner is ready and I just had to stir it up.


This morning I decided that I would put on the roast before we head out to church.  B wanted to help, and so I let her put everything into the crock pot - and we were done in less then 5 minutes.  Having dinner ready for us tonight, and not having to worry about it at all the rest of the day - worth 5 minutes of my morning!  And another great part - Less then $7.00 for the whole meal, and it will have leftovers for us to eat lunch tomorrow.



I forgot to get a picture of everything before we started, but here are the ingredients and the "finished" product as it starts to cook.  At dinner time tonight we will just whip up some mashed potatoes (yes, I use instant and I am ok with that), and sit down to enjoy!



Place the Roast in the Crockpot with 1/4 cup of Hot Water
Top with Onion Soup Mix
Add 2 Cans of Diced Tomatoes on Top
Cover and Cook on Low for 6+ Hours until Tender
Eat as Is, or With Mashed Potatoes

Learning about Catering, and Myself!

Last week I was in Las Vegas, attending CaterSource Catering Convention. I learned so many things about myself, my work, and the people that I am surrounded by.  Some good and some bad, but all have helped me to realize more of what I want for my life. A Week of Golf

In 2017 my team was tasked with exciting job of catering to the LPGA Marathon Classic for their week long golf tournament here in town.  We had less then 4 months to prepare, and we had never done anything on such a large scale before.  It was both exhilarating and terrifying, especially for an Enneagram 6 like me.  We are loyal and committed, but our biggest needs are security, and we fear not having the support and guidance needed.  What a way to walk into a task like this.   I was suddenly tasked with finding organizations to fill close to 200 shifts for concession stands, as well as around 75 employees to help me make this event a reality.  It took a lot of time, planning, questions, stress, and a roller coaster of emotions, but we did it!  It was amazing the feeling that you have after you accomplish something like that. Weekly Menu Plan

This week has already been changed around again and again from my husband being in town, to leaving, to coming home early, to leaving again, so the menu plan has been changing, but that is the great thing about having food in the pantry & freezer! Since I didn't get around to making "Cheese" Soup last week, I made it last night.  While it was an interesting batch of ingredients, it turned out to be quite delicious!  I will post my version of the recipe tomorrow! This week we plan to eat at work everyday for lunch, or to finish up leftovers from the fridge, so even less menu planning!
