The Changing of Seasons...

Over the past few years I have wrote a few draft posts, I have posted and deleted within minutes, I have gone months without even remembering I even had a blog started.... and then over the last 2 weeks that I spent in Ireland I had time to breathe and think about what I really wanted out of life, and how I wanted to be able to share my experiences in life, and those of my amazing child - B.

Now that she is 4 (and a HALF) I have more time to do the things in life I enjoy, and not just pushing to get through each day while tending to her every whim.  I want to make sure that I am documenting the great things that we are experience as a family, and as individuals.  

This blog is going to continue to be a mash-up of all things Leslie.  The adventures, the mis-adventures, the shopping splurges, the amazing coupon deals, and all of the things that go on in my life, and those of my "Litter"  

My Litter has changed in the past few years.  In February 2014 our Precious B came into our life, and changed us all for the better.  Then just after her 2nd birthday we had to put our Sweet Milo Midnight to sleep.  He had used up all of his 9 lives and was looking for peace.  It was heart-breaking and we all still think of him daily, but we know that he is no longer in pain and with that comes some kind of comfort.

We have discussed adding a dog to the pack, but when we asked B if she would rather have a dog or be able to go on vacation whenever we wanted - she quickly replied - VACATION!  This girl is made for travel and adventure.

My Litter consists of the following, 



*Bailey - My Dear Husband, who has been dealing with my randomness for 15 years, and continues to be there for me each and every moment I need him.
*Sweet B - Our amazingly beautiful little girl, who is a little sweet and whole lot of Sassy.
*Miley Princess - A sweet Brown Striped Cat that is going on 10 years since we brought her home from the shelter and she is still playful and lovable, just at a slower pace these days
*Boo-Boo Bailey - The grouchy old long-haired cat we adopted from an old neighbor close to 8 years ago because he didn't like kids, but has now turned into a protector and playmate for B,

This is our family for now... but who is to say that another cat won't join in our family at any time.  I have quite the group of strays that travel through my yard, and that I have tried to lure into the house - against all better judgement.

Learning about Catering, and Myself!

Last week I was in Las Vegas, attending CaterSource Catering Convention. I learned so many things about myself, my work, and the people that I am surrounded by.  Some good and some bad, but all have helped me to realize more of what I want for my life. A Week of Golf

In 2017 my team was tasked with exciting job of catering to the LPGA Marathon Classic for their week long golf tournament here in town.  We had less then 4 months to prepare, and we had never done anything on such a large scale before.  It was both exhilarating and terrifying, especially for an Enneagram 6 like me.  We are loyal and committed, but our biggest needs are security, and we fear not having the support and guidance needed.  What a way to walk into a task like this.   I was suddenly tasked with finding organizations to fill close to 200 shifts for concession stands, as well as around 75 employees to help me make this event a reality.  It took a lot of time, planning, questions, stress, and a roller coaster of emotions, but we did it!  It was amazing the feeling that you have after you accomplish something like that. Weekly Menu Plan

This week has already been changed around again and again from my husband being in town, to leaving, to coming home early, to leaving again, so the menu plan has been changing, but that is the great thing about having food in the pantry & freezer! Since I didn't get around to making "Cheese" Soup last week, I made it last night.  While it was an interesting batch of ingredients, it turned out to be quite delicious!  I will post my version of the recipe tomorrow! This week we plan to eat at work everyday for lunch, or to finish up leftovers from the fridge, so even less menu planning! For dinners I am making the following: Taco Salads "Cheese" Soup Loaded Nachos Steamed Vegetables and Crescent Rolls (My husband can live on vegetables alone!)
