Me & My Litter

Welcome to my blog!  The one I have been talking about starting for weeks, months, probably a few years by now... but time just keeps slipping away, far too quickly.  Today I decided that it is finally time for me to sit down and write, instead of turning on old re-runs and taking a nap on the couch, like I find myself far to often.

Here is a little about me, and my "litter"...
I am 26 years old, working at a job I love, married to my best friend, and living only a few short blocks from my parents in the city that I grew up in.  My husband and I recently celebrated 8 years of sharing our lives with one another and creating the good, the bad & the priceless memories.  We have a small litter of cats that have come into our lives, one by one, over the last 5 years, and they bring us so much love and laughter that we don't know where we would be without them.  We always thought we were going to be a pet-free home, until each of them came to us with no place else to turn, and taking them in has been the best thing we ever did, for them and for us!

We live an "average" life, with an "average" house, "average" jobs, and "average" income, but one thing has changed us... the desire to be debt free! 
I know that there are a lot of people out there that feel the same way, and I would love to hear stories, learn how you became motivated, what keeps you motivated, and what was the hardest thing was to change about your habits.

This blog is meant to share about my life, my celebrations, my struggles, and how my "litter" keeps me going!  I hope that you join me for my journey, and that we can learn from each other as we find our destination!

Learning about Catering, and Myself!

Last week I was in Las Vegas, attending CaterSource Catering Convention. I learned so many things about myself, my work, and the people that I am surrounded by.  Some good and some bad, but all have helped me to realize more of what I want for my life. Over the last year I have realized how important it is to take the time to make these realizations.  I need to know the my strengths so I can keep them going.  I need to know my weaknesses so that I can work them.  I also need to know my goals.  Even if they are ever-changing goals, I still need to know them.  If I am walking through my days just hoping for the best then I never know if I get anywhere. A Week of Golf

In 2017 my team was tasked with exciting job of catering to the LPGA Marathon Classic for their week long golf tournament here in town.  We had less then 4 months to prepare, and we had never done anything on such a large scale before.  It was both exhilarating and terrifying, especially for an Enneagram 6 like me.  We are loyal and committed, but our biggest needs are security, and we fear not having the support and guidance needed.  What a way to walk into a task like this.   I was suddenly tasked with finding organizations to fill close to 200 shifts for concession stands, as well as around 75 employees to help me make this event a reality.  It took a lot of time, planning, questions, stress, and a roller coaster of emotions, but we did it!  It was amazing the feeling that you have after you accomplish something like that. Weekly Menu Plan

This week has already been changed around again and again from my husband being in town, to leaving, to coming home early, to leaving again, so the menu plan has been changing, but that is the great thing about having food in the pantry & freezer! Since I didn't get around to making "Cheese" Soup last week, I made it last night.  While it was an interesting batch of ingredients, it turned out to be quite delicious!  I will post my version of the recipe tomorrow! This week we plan to eat at work everyday for lunch, or to finish up leftovers from the fridge, so even less menu planning! For dinners I am making the following: Taco Salads "Cheese" Soup Loaded Nachos Steamed Vegetables and Crescent Rolls (My husband can live on vegetables alone!)
